Ingredients

  • 300 g pasta penne, fusilli, or spaghetti
  • 1 tbsp olive oil or butter
  • 450 g ground chicken
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1 cup crushed tomatoes
  • 1 tbsp tomato paste
  • 1/2 cup chicken broth
  • 1/2 cup cream cheese or heavy cream
  • 1 cup shredded mozzarella cheese plus extra for topping
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Optional Add-ins

  • 1 bell pepper diced
  • 1 cup fresh spinach or zucchini chopped
  • fresh basil or parsley for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Bring a large pot of salted water to a boil. Cook pasta until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium-high heat. Add ground chicken and cook for 5-7 minutes until browned.
  • Add diced onion, garlic, and Italian seasoning. Cook 2-3 minutes until fragrant and translucent.
  • Stir in crushed tomatoes, tomato paste, and chicken broth. Simmer for 5-7 minutes to thicken slightly.
  • Lower heat and stir in cream cheese or heavy cream. Let it melt into a creamy sauce.
  • Combine cooked pasta with the sauce in the skillet. Add mozzarella and Parmesan. Mix until well combined.
  • If desired, top with extra cheese and bake for 15–20 minutes until bubbly and golden on top.
  • Garnish with fresh herbs and serve warm.

Notes

Customize with your favorite veggies or make it lighter with low-fat dairy options. Leftovers freeze well for up to 3 months.
